In general residual pulp of pink guava (Psidum guajava L.) after processing and produce pink guava juice still caontain large amounts of vitamin such as polyphenols antoxidant. The polyphenols had to be isolated by an extration method using an organic or non-organic solvent. Use of an Organic solvent will result the residual of organic solvent that dangerous for human health. Meanwhile in general the product of polyphenols is used for healthy and cosmetics product. The best solvent for extraction polyphenols was ratio Methanol water 60% and the second highest was water as a solvent. So, the objectives these studies are to observe the potency of pure water as a solvent to recover polyphenols by membrane ultrafiltration. The result are conclusive of the fact that the pure water is the effective solvent for retrieving polyphenols from pink guava processing wastes. The percentages recovery of polyphenols when using water as a solvent 60% and using 60% methanols water as a solvent is 40% at TMP of 2 bars. Beside, by Increasing the amount of polyphenols from 0,78mg/g to 1,12 mg/m.
