    Abstract
    Galaktomanan merupakan senyawa karbohidrat golongan polisakarida telah diisolasi dari ampas kelapa melalui metode ekstraksi dengan menggunakan pelarut etanol dan selanjutnya dilakukan uji aktivitasnya sebagai antioksidan. Sebanyak 130 g ampas kelapa kering diekstraksi dengan menggunakan metode refluks dalam pelarut etanol sebanyak 780 ml pada suhu 500C selama 5 jam. Masing-masing ekstrak galaktomanan yang diperoleh, dimurnikan dengan menggunakan pereaksi Fehling dan diikuti dengan penambahan HCl dan etanol, sentrifugasi dan pengeringan yang kemudian diperoleh galaktomanan murni rata- rata sebanyak 0,33 g (0,0254%). Hasil analisa spektrum FT-IR memberikan spektrum yang menggambarkan pola spektrum senyawa bahwa hasil ekstraksi adalah galaktomanan. Selanjutnya galaktomanan yang diperoleh melalui pengujian aktivitas antioksidan dengan metode DPPH diperoleh nilai IC50 sebesar 8,18 mg/mL
     
    Galactomannan is a carbohydrate compound of polysaccharide class that has been isolated from coconut pulp through extraction method using ethanol solvent and furthermore its activity test is carried out as antioxidant. As much as 130 g of dried coconut pulp is extracted by using reflux method in 780 ml ethanol solvent at a temperature of 500C for 5 hours. Each extract galactomannan obtained is purified by using Fehling reagent and followed by the addition of HCl and ethanol, centrifugation and drying of thus pure galactomannan obtained an average of 0.33 g (0.0254%). Results of FT-IR spectrum analysis provides a spectrum that describes the pattern of compound spectrum that the extraction is galactomannan. Furthermore galactomannan obtained through antioxidant activity testing with DPPH method, IC50 values is obtained at 8.18 mg / mL
