    Abstract
    Dates is widely consumed by the Muslims, it was used as medicine and food. It has many benefits and also easily and quickly digested. It contains many elements and complete composition are very important to human body. Its contains carbohydrate, protein, fat, vitamins and minerals such as potassium, sodium, zinc, calcium, iron, manganese and copper. The purpose of this study to determined levels of potassium and zinc metal on a dates Ajwah, Medinah dates and dates of Egypt. Qualitative analysis was carried out with picric acid 1% w / v and dithizon solution 0.005% w / v reagent at pH 5,0. The test gives positive results for potassium and zinc in all three samples. Quantitative analysis was carried out by atomic absorption spectrophotometry at a wavelength of 769.9 nm for potassium and 213.9 nm for zink. The results showed that the levels of potassium in Ajwah was 594.4489 ± 6.3206 mg/100g, Madinah was 566,9722 ± 13,9002 mg/100g, Egypt was 651.5004 ± 8, 9773 mg/100g. While the levels of zinc in the Ajwah was 0.5543 ± 0.0110 mg/100g, Madinah was 0.4398 ± 0.0075 mg/100g, Egypt was 0.6181 ± 0, 0044 mg/100g. In statistics, the average difference test potassium and zinc content between Ajwah dates, Madinah dates and Egypt dates used the t distribution, concluded that the content of potassium and zinc in Egypt dates were significantly higher than Ajwah dates and Madinah dates.
     
    Buah kurma merupakan buah yang banyak dikonsumsi kaum muslim, disamping itu juga digunakan sebagai obat dan makanan. Buah kurma memiliki banyak khasiat juga mudah dan cepat dicerna. Buah kurma mengandung berbagai unsur penting dan komposisi yang komplit yang dibutuhkan oleh tubuh manusia. Kurma mengandung karbohidrat, protein, lemak, vitamin dan mineral seperti kalium, natrium, zink, kalsium, besi, mangan dan tembaga. Tujuan dari penelitian ini adalah untuk mengetahui kadar logam kalium dan zink pada buah kurma Ajwah, kurma Madinah dan kurma Mesir. Analisis kualitatif kalium dilakukan dengan pereaksi asam pikrat 1% b/v dan zink dengan larutan dithizon 0,005%b/v pada pH 5,0. Uji memberikan hasil yang positif untuk kalium dan zink pada ketiga sampel. Analisis kuantitatif dilakukan dengan spektrofotometri serapan atom pada panjang gelombang 769,9 nm untuk kalium dan 213,9 nm untuk zink. Hasil menunjukkan kadar kalium pada kurma Ajwah yaitu 594,4489 ± 6,3206 mg/100g, kurma Madinah yaitu 566,9722 ± 13,9002 mg/100g, kurma Mesir yaitu 651,5004 ± 8,9773 mg/100g. Sedangkan kadar zink pada kurma Ajwah yaitu 0,5543 ± 0,0110 mg/100g, kurma Madinah yaitu 0,4398 ± 0,0075 mg/100g, kurma Mesir yaitu 0,6181 ± 0,0044 mg/100g. Secara statistik, uji beda rata-rata kandungan kalium dan zink antara kurma Ajwah, kurma Madinah dan kurma Mesir dengan menggunakan distribusi t, menyimpulkan bahwa kandungan kalium dan zink pada kurma Mesir lebih tinggi secara signifikan dari kurma Ajwah dan kurma Madinah.
