dc.description.abstractPenentuan kadar karbohidrat, serat dan protein dari nata de oriza pada pencucian beras ramos IR-64 secara berulang telah dilakukan. Air cucian beras ramos IR-64 difermentasikan menjadi produk nata de oriza. Analisis kadar karbohidrat ditentukan dengan menghitung kadar protein, lemak, abu dan air. Kadar protein ditentukan dengan metode kjeldahl, kadar serat ditentukan dengan metode pendelignifikasian. Dari hasil penelitian diperoleh kadar karbohidrat tertinggi pada nata de oriza I yaitu 19,56% dan terendah pada nata de oriza II yaitu 19,51%. Kadar serat tertinggi pada nata de oriza II yaitu 4,82% dan terendah pada nata de oriza I yaitu 3,83%. Kadar protein tertinggi pada nata de oriza I yaitu 2,79% dan terendah pada nata de oriza II yaitu 2,60%en_US
dc.description.abstractThe determination of carbohydrate content, fiber and protein of the nata de oriza at the rice washing water or ramos IR-64 was in step by step had been done. The rice washing water of ramos IR-64 was fermented to be nata de oriza. Analyzed of carbohydrate content was appointed by level of protein, fat, dust and water. Content was protein was appointed with Kjeldahl methode and content of fiber was appointed with delignification’s methode. From the result of analyzed was the highest content of carbohydrate at the nata de oriza I that was 19,56% and the lowest carbohydrate at the nata de oriza II that was 19,51%. The highest content of fiber at the nata de oriza II that was 4,82% and the lowest fiber at the nata de oriza I that was 3,83%. The highest content of protein at the nata de oriza I that was 2,79% and the lowest protein at the nata de oriza II that was 2,60%.en_US
