dc.description.abstractHospital as one of health institution has a duty that support in medical patient healing and recovering by institutional food service healthy and hygiene food. Because of that, it needs to managed the healthy food and fulfill the condition of standard sanitation for hygiene food. The purpose for this research was for hygiene evaluation and food processing sanitation at Nutrition Instalation of Artha Medica Hospital Binjai in completing hygiene quality standard and managed sanitation food according to Minister of Health Regulation 1204/MENKES/SK/X/2004 on Hospital Healthy Environment Regulation. The research design was evaluation research, it characteristic was descriptive observational by observing to research object. Research object was hygiene sanitation of manage food, including exam of food material condition, stores of the food material, processing place (kitchen), processing food tools, people who process the food, way of serving the food. Examine resulted of hygiene sanitation applied for food processing in Nutrition Instalation of Artha Medica Hospital Binjai categorited good with in completing hygiene quality standard and managed sanitation food according to Minister of Health Regulation 1204/MENKES/SK/X/2004 on Hospital Healthy Environment Regulation. From the examine result it can be conclusion that applied of hygiene sanitation institutional food service at Nutrition Instalation of Artha Medica Hospital Binjai not compatible with the gold standard of Minister of Health Regulation 1204/MENKES/SK/X/2004 on Hospital Healthy EnvironmentRegulation. It suggested for Nutrition Instalation of Artha Medica Hospital Binjai to increase the facilities that supported hygiene sanitation of food processing for example a partition screen in kitchen,en_US
dc.description.abstractRumah sakit sebagai salah satu institusi pelayanan kesehatan yang mempunyai tugas mendukung upaya penyembuhan dan pemulihan pasien melalui penyelenggaraan makanan yang higienis dan sehat. Oleh karena itu, perlu adanya pengelolaan makanan yang baik dan memenuhi syarat higiene sanitasi makanan yang sesuai dengan standart yang ada. Tujuan penelitian ini adalah untuk meninjau higiene dan sanitasi pengelolaan makanan di Instalasi Gizi RSU Artha Medica Binjai dalam pemenuhan standar kualitas higiene dan sanitasi pengelolaan makanan sesuai Kepmenkes1204/MENKES/SK/X/2004. Penelitian ini dirancang sebagai penelitian peninjauan, bersifat observasinal deskriptif dengan melakukan pengamatan terhadap obyek penelitian. Obyek penelitian yaitu higiene sanitasi dalam penyelenggaraan makanan, meliputi pengadaan bahan makanan, penyimpanan bahan makanan, pengolahan makanan yang meliputi, tempat pengolahan makanan (dapur), peralatan pengolahan makanan, tenaga pengolah atau penjamah makanan, cara penyajian makanan. Hasil penilaian penerapan higiene sanitasi penyelenggaraan makanan di Instalasi Gizi RSU Artha Medica Binjai kategorikan baik bila memenuhi persyaratan Kepmenkes 1204/MENKES/SK/X/2004. Dari hasil penelitian dapat disimpulkan bahwa penerapan higiene sanitasi penyelenggaraan makanan di Instalasi Gizi RSU Artha Medica Binjai tidak sesuai dengan gold standart yang ada yakni Kepmenkes 1204/MENKES/SK/X/2004 tentang Persyaratan Kesehatan Lingkungan Rumah Sakit. Disarankan kepada pihak instalasi gizi RSU Artha Medica Binjai meningkatkan fasilitas yang menunjang higiene sanitasi penyelenggaraan makanan.en_US
