Avian influenza or bird flu has attracted worldwide attention because highly pathogenic avian influenza virus, subtype H5N1, causes fatal infections not only in poultry but also in human. The risk of AI infection exists along the whole poultry market chain. Virus influenza is a dynamic virus and tends to change continuously. Such change is influenced by environmental condition including nutritional factor. Influenza virus can mutate in two different ways: antigenic drift and antigenic shift. The first reason for the mutation is selection mechanism. Both influenza virus and coxsackievirus are mRNA viruses having high rate of mutation due to the absence of proofreading during enzyme replication. The second possibility of virus mutation relates to oxidative stress caused by, for example, the deficiency of Selenium or the absence of glutation peroxidase antioxidant. This situation has a direct effect on mRNA viruses (mutation) to become more pathogenic. Therefore, improvement of nutritional status has an important role in preventing avian influenza. Some of nutrients, especially of those source of antioxidants, that are important in preventing avian influenza are vitamin C, vitamin E, Selenium, Zinc, and others antioxidant compound, such as quercetin, curcumin, emodin, dan resveratol.
