Pengaruh Variasi Ph Dan Konsentrasi Inokulum Pada Produksi Minyak Kelapa Secara Fermentasi

The purpose of the research was to obtain the optimum pH and inoculums concentration on coconut milk fermentation by Citrobacter sp. isolate of mud-crab. The variation of pH was 5, 6, 7, and 8 with inoculum concentration of 5, 10, 15, 20, and 25% (v/v). This experiment was designed as factorial completely randomized design (CRD). The results of variance analysis show the combinations pH and inoculums concentration was no- significant variation. However, the highest volume average of coconut oil production of 31,05 ml from 100 ml coconut milk or oil content 31.05% got from P3S3 combination (pH 7 and inoculums concentration 15%).
